Eggless Chocolate Cupcakes

Yeah, I have already posted this recipe on the website before… you can get the printable version of the recipe on the original post. Today, I am sharing it again because, quite frankly, I make them all the time. And I felt it was high time to video the process of making these delicious eggless chocolate cupcakes from scratch.

Remy’s class is studying the color blue this week. Oh, to be in pre-k again. His teacher asked for blue snacks. I offered to send in some safe cupcakes (Remy is allergic to eggs) with blue icing.

I first made this recipe during the quarantine of 2020. Ah, good times. I have been told this recipe was originally created during the Great Depression when eggs and milk were difficult and expensive. For us, as an allergy family, this is super handy. It is also incredibly convenient that most of the ingredients are already in most kitchen pantries. Nothing odd or bizarre to track down.
