Eggless Banana Bread

I love banana bread. My mom has made the yummiest banana bread for as long as I could remember. A while ago, my son Riley asked me to make it without any eggs. Since he is allergic, we have been working on tweaking some of our recipes to make them safe for him. We came up with this delicious eggless banana bread recipe.

One thing I have learned from my egg-free life, is to use baking powder instead of baking soda. Baking powder will help fluff up your baked goods.


Our eggless journey…

We suspected pretty early on that Riley had an issue with eggs. I remember when he was one, he snatched a piece of scrambled egg off my plate at a restaurant. Pretty much immediately, his face was covered in hives. I called the pediatrician and rushed him over to her. We sat in her office for several hours monitoring him.

Once he was two, we had him tested at the allergist. That doc told me the egg allergy is real. And he also told me to keep Riley away from soy.

For the next several years, I accidentally poisoned Riley a few times. We spent many days/nights in the ER. Finally, when he was 8, we met a fantastic doctor who took the time to educate me (and Riley) on the seriousness of his allergy. That doc helped me create a plan. He decided to test Riley’s soy allergy – since I knew some of the things Riley has survived on contain soy (ie. Oreos).

Riley’s soy tolerance test showed us that soy is safe for him. Although drinking soy milk was “totally disgusting” (Riley’s words), it did not cause any reaction.

Egg, however, in any form is dangerous. We had that reconfirmed last year (2019) by our newest allergist in Tennessee. He sent blood samples to a lab. The lab called and said, “He is wildly allergic. Stay away from things even if they are only ‘processed in a factory with egg’.” Wonderful.

In my baking, I use either apple sauce or Greek yogurt in place of the eggs. In cupcakes, yogurt is a good substitute. Apple sauce in my cupcakes made them very wet. Yuck.

Ingredients
  

  • 3-4 ripe bananas
  • cup butter, melted
  • ¾ cup granulated sugar
  • 2 TBS unsweetened apple sauce
  • 1 tsp vanilla
  • 4 tsp baking powder
  • ¼ tsp cinnamon
  • tsp salt
  • 1 ½ cup all-purpose flour
  • 1 cup chocolate chips (if desired)

Instructions
 

  • Preheat the oven to 350°F. Spray an 8.5x4.5-inch loaf pan with baking spray.
  • In a large bowl, mash the bananas with a wooden spoon.
  • Combine the melted butter with the bananas, then add the sugar, apple sauce and vanilla. Stir well with a wooden spoon.
  • Sprinkle the baking powder, cinnamon and salt over the banana mixture. Stir to combine.
  • Add flour ½ cup at a time. Stir to combine.
  • Fold in the chocolate chips. (Riley says this step is not optional.) Pour the batter into your greased loaf pan.
  • Bake for 50-60 minutes, until a knife inserted in the center comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
